“I’m very explorative as a chef,” Little says. “I’m trying to emphasize that Tapas is more than just Spanish food, but a way of eating and a shared experience, which is 100 per cent down my avenue.”

Summer has been a busy time for Canmore restaurants and the town has also seen the addition of a brand new pizza place. Co-owner David Carruthers, a longtime restaurant-industry veteran, describes his new Rocket Pie pizza shop as a dream that took seven years to materialize. After briefly working at a pizzeria in Toronto, Carruthers fell in love with the art of making pizza and has spent years adapting his dough recipe to Alberta’s climate. His passion for skiing tempted him to come out to Canmore and he and his father partnered to open Rocket Pie in the Shops of Canmore earlier this summer, bringing chef Josh Cocca (formerly of Tavernetta and Pubblico) along to head up the kitchen. The shop is already developing a loyal following among both locals and visitors.
Rocket Pie offers 10 pizzas (plus one feature) with classic Italian toppings like cheese and basil ($18) or prosciutto and arugula ($24). Carruthers is inspired by thin-crust Neopolitan-style pizza, though his crust is a little crisper and more structured than an authentic Naples pie. To balance things out, the menu also includes a hearty kale Caesar salad ($15) and an ever-evolving Insalata Mista ($16) made with a mélange of fresh vegetables provided by local farmers.
The restaurant itself is surprisingly large, with 70 seats under normal circumstances, but currently operates under reduced capacity with plenty of plexiglass dividers to keep everyone safe. Rocket Pie is located at #101, 304 Old Canmore Rd and can be reached at rocketpie.ca or 403-675-2865.
